Coconut chocolate chip cake

I love cakes, well slightly obsessed with cakes i must say. I decided to make a coconut chocolate chip cake. I do not enjoy icing on cakes, therefore most of my cakes will not be having any icing on it.

For this cake, here are some of the ingredients i used.

Ingredients

2cups  flour

500g  butter/ Margarine

250g desiccated coconut

100g chocolate chips

1 tps orange oil

2 tps baking powder

3 eggs

1 cup of milk

*The trick to bake a moist cake is to use the ingredients at room temperature.

Instructions

  1. Pre heat oven to 120º.
  2. Mix flour, sugar and baking powder in a  bowl. Whisk milk, oil,butter and eggs in a bowl.
  3. Stir in chips and the desiccated coconut.
  4. Pour the batter into greased pan.
  5. Bake for 30-35 minutes or until a toothpick comes out with only a few crumbs 20180504_191446
  6. Serve the cake after it cools.

Kitchen whip Meat pie

When it comes to making snacks, my go to is something creative and tasty, also i want to try and make them as healthy as possible. So today i decided to make meat pies which will serve as our evening snack.

Ingredients

  1. 3 Cups of Flour
  2. 1 Table spoon of Baking powder
  3. A pinch of salt
  4. 250g unsalted butter
  5. 250g Lard
  6. 2 tablespoons of sugar (optional)
  7. 2 eggs
  8. A cup of ice cold water
  9.  500g minced beef
  10. 2 Red onions
  11. 2 tomatoes
  12. Spices(depending on preference)
  13. cooking oil

Instructions

In a bowl sieve your flour to get rid of any unwanted objects, add baking powder, sugar and salt.

Add the unsalted butter and lard, mix them till it has a sand like texture,use your hand to mix.

Add the water and eggs and knead it to a dough. Do not work so much on the dough to avoid stretching it. Once you are done put the dough in the fridge and let it rest for 30 minutes.

Preheat the oven

For the meat, heat oil in a cooking pan, add the meat let it cook for a while till its a bit dry.

Add the onions and tomatoes in the cooking pan and let them cook add your spices and let it simmer for 10-15 minutes.

Once the dough is well rested, divide it into equal portions and start rolling them as such;IMG_20180504_161202.jpg

Place the fried minced meat on the rolled dough and half the circle, press with a fork gently to lock in the contents of the pie. Once done, do an egg wash for glaze.

Place them in the baking tray and place them in the oven, bake at 180 degrees for 10-15 minutes

Serve hot with a glass of milk, enjoy!
